Ingredients
– 2 cups all-purpose flour
– 1 tablespoon granulated sugar
– 1 teaspoon salt
– 1 teaspoon active dry yeast
– 1/2 cup warm milk
– 1/4 cup unsalted butter, melted
– 1 cup mashed purple sweet potatoes
Instructions
1. – In a large bowl, combine the flour, sugar, salt, and yeast.
2. – Add the warm milk and melted butter, and stir until a shaggy dough forms.
3. – Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
4. – Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
5. – Punch down the dough and divide it into 12 equal pieces. Roll each piece into a smooth ball.
6. – Place the buns on a parchment-lined baking sheet, cover, and let rise for 30 minutes.
7. – Preheat the oven to 375°F (190°C).
8. – Bake the buns for 18-20 minutes, or until golden brown.
