Description

This homemade Purple Sweet Potato Jam is a delightful and versatile spread that adds a vibrant pop of color and delicious sweetness to your day. Spread it on toast, waffles, scones, or enjoy it straight by the spoonful!


Ingredients

– 2 lbs purple sweet potatoes, peeled and cubed

– 1 cup granulated sugar

– 2 tbsp lemon juice

– 1 tsp ground cinnamon

– 1/4 tsp ground nutmeg


Instructions

1. 1. Place the cubed sweet potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.

2. 2. Drain the cooked sweet potatoes and transfer to a large bowl. Mash them until smooth.

3. 3. In a saucepan, combine the mashed sweet potatoes, sugar, lemon juice, cinnamon, and nutmeg. Cook over medium heat, stirring frequently, until the mixture thickens and bubbles, about 15-20 minutes.

4. 4. Remove from heat and let cool slightly. Transfer the jam to sterilized jars and refrigerate until ready to use.

Notes

This jam can be stored in the refrigerator for up to 2 weeks. It also freezes well for longer storage. Try using it as a topping for pancakes, waffles, or even as a filling for baked goods.
