Ingredients
– 2 cups all-purpose flour
– 1/2 cup unsalted butter, chilled and cubed
– 1/4 cup granulated sugar
– 1 egg, beaten
– 1 teaspoon vanilla extract
– 1/2 cup raspberry jam
– 1/4 cup vanilla protein powder
Instructions
1. In a food processor, pulse the flour, butter, and sugar until the mixture resembles coarse crumbs.
2. Add the beaten egg and vanilla extract, and pulse until the dough just begins to come together.
3. Turn the dough out onto a lightly floured surface and gently knead a few times to form a smooth ball.
4. Divide the dough in half and roll each piece into a rectangle, about 1/8-inch thick.
5. Spread the raspberry jam evenly over one piece of dough, leaving a 1/2-inch border. Sprinkle the protein powder over the jam.
6. Place the second piece of dough on top and press the edges to seal.
7. Use a fork to crimp the edges and create a decorative pattern.
8. Bake at 400°F for 15-18 minutes, or until the pop tarts are golden brown.
9. Let cool for 5 minutes, then dust with powdered sugar before serving.
Notes
For a more indulgent treat, you can drizzle a simple powdered sugar glaze over the top of the pop tarts. Store any leftovers in an airtight container at room temperature for up to 3 days.
