Ingredients
– 8 ounces high-quality white chocolate, chopped
– 1 1/2 cups heavy cream
– 1/4 cup powdered sugar
– 1 teaspoon vanilla extract
– 1 1/2 cups fresh raspberries
Instructions
1. In a medium bowl set over a saucepan of simmering water, melt the white chocolate, stirring occasionally, until smooth. Remove from heat and let cool slightly.
2. In a large bowl, beat the heavy cream with an electric mixer until it begins to thicken. Gradually add the powdered sugar and vanilla, and continue beating until the cream forms soft peaks.
3. Gently fold the whipped cream into the melted white chocolate until well combined.
4. Fold in the fresh raspberries, being careful not to crush them.
5. Spoon the mousse into individual serving dishes or a large serving bowl. Refrigerate for at least 2 hours, or until set.
6. Serve chilled, garnished with additional fresh raspberries if desired.
Notes
For a firmer texture, you can use 1 1/4 cups heavy cream instead of 1 1/2 cups. You can also try substituting other berries, such as blackberries or blueberries, for a variation.
