Ingredients

– 3 lbs red potatoes, peeled and cubed

– 1/2 cup unsalted butter, softened

– 1 cup milk

– 1 tsp salt

– 1/4 tsp black pepper


Instructions

1. – Place the cubed red potatoes in a large pot and cover with cold water.

2. – Bring the water to a boil over high heat, then reduce to medium-low and simmer for 15-20 minutes, until the potatoes are fork-tender.

3. – Drain the potatoes and return them to the pot.

4. – Add the softened butter, milk, salt, and pepper. Use a potato masher or hand mixer to mash the potatoes until smooth and creamy.

5. – Taste and adjust seasoning as needed.

6. – Serve the red mashed potatoes hot, garnished with chopped chives or parsley if desired.

Notes
