Description

Refreshing No-Bake Chia Pudding Bars are a delightful, nutrient-dense treat that come together in just 5 minutes. Layers of creamy chia pudding and a crunchy graham cracker crust make for a satisfying and healthy snack or dessert.


Ingredients

– 1/2 cup chia seeds

– 2 cups unsweetened almond milk

– 1/4 cup honey

– 1 teaspoon vanilla extract

– 1/4 teaspoon ground cinnamon

– 1 1/2 cups graham cracker crumbs

– 2 tablespoons melted coconut oil


Instructions

1. 1. In a medium bowl, whisk together the chia seeds, almond milk, honey, vanilla, and cinnamon. Cover and refrigerate for at least 2 hours, or until thickened.

2. 2. In a separate bowl, mix the graham cracker crumbs and melted coconut oil until well combined.

3. 3. Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides.

4. 4. Press the graham cracker mixture evenly into the bottom of the prepared pan.

5. 5. Spread the chia pudding over the graham cracker crust in an even layer.

6. 6. Cover and refrigerate for at least 2 hours, or until set.

7. 7. Remove the bars from the pan using the parchment paper overhang and cut into squares.

8. 8. Serve chilled and enjoy!

Notes

For a variation, top the chia pudding with fresh berries or a drizzle of melted dark chocolate. The bars can be stored in the refrigerator for up to 5 days.
