Description

Remi’s Ratatouille Soup is a delightful, vegetable-based soup that’s bursting with flavor. This quick and easy recipe comes together in just 20 minutes, making it the perfect weeknight meal or comforting lunch.


Ingredients

– 2 tablespoons olive oil

– 1 large onion, diced

– 3 cloves garlic, minced

– 1 eggplant, diced

– 1 zucchini, diced

– 2 cups diced tomatoes (canned or fresh)

– 4 cups vegetable broth

– 1 teaspoon dried thyme

– 1 teaspoon dried basil

– Salt and pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. In a large pot, heat the olive oil over medium heat.

2. Add the diced onion and sauté for 2-3 minutes until translucent.

3. Stir in the minced garlic and cook for an additional minute.

4. Add the diced eggplant and zucchini to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.

5. Pour in the diced tomatoes and vegetable broth. Stir in the dried thyme and basil.

6. Bring the soup to a simmer and let it cook for 10 minutes, or until the vegetables are tender and the flavors have blended.

7. Season with salt and pepper to taste.

8. Ladle the Remi’s Ratatouille Soup into bowls and garnish with fresh chopped parsley.
