Indulge in the classic flavors of a Reuben sandwich in these crispy, golden Reuben Balls, served with a tangy and creamy Thousand Island Dipping Sauce. This easy-to-make appetizer is perfect for game days, movie nights, or any occasion when you crave a comforting and delicious snack.
Ingredients
– 1 lb corned beef, finely chopped
– 1 cup shredded Swiss cheese
– 1 cup sauerkraut, drained and squeezed dry
– 1 cup panko breadcrumbs
– 2 eggs, beaten
– 1/4 cup all-purpose flour
– 1 tsp caraway seeds
– 1/2 tsp garlic powder
– 1/4 tsp salt
– 1/4 tsp black pepper
– 1 cup mayonnaise
– 1/4 cup ketchup
– 2 tbsp dill pickle relish
– 1 tbsp white vinegar
– 1 tsp Dijon mustard
– 1/2 tsp paprika
– 1/4 tsp cayenne pepper
Instructions
1. – Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. – In a large bowl, combine the chopped corned beef, shredded Swiss cheese, drained sauerkraut, panko breadcrumbs, beaten eggs, flour, caraway seeds, garlic powder, salt, and black pepper. Mix well until fully incorporated.
3. – Scoop the mixture by rounded tablespoons and roll into balls, placing them on the prepared baking sheet.
4. – Bake for 15-18 minutes, or until the Reuben Balls are golden brown and crispy.
5. – While the Reuben Balls are baking, prepare the Thousand Island Dipping Sauce. In a medium bowl, whisk together the mayonnaise, ketchup, pickle relish, white vinegar, Dijon mustard, paprika, and cayenne pepper until well combined.
6. – Serve the freshly baked Reuben Balls warm, with the Thousand Island Dipping Sauce on the side for dipping.
Notes
For a spicier dipping sauce, increase the amount of cayenne pepper. You can also try using different types of cheese, such as cheddar or Gruyère, in the Reuben Balls. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
