Description

Reuben Bowls are a delicious, easy-to-make twist on the classic Reuben sandwich. Tender corned beef, tangy sauerkraut, melty Swiss cheese, and a creamy thousand island-style dressing come together in a satisfying bowl that’s perfect for a quick weeknight dinner or meal prep.


Ingredients

– 1 pound corned beef, sliced or shredded

– 2 cups sauerkraut, drained

– 1 cup shredded Swiss cheese

– 1/2 cup thousand island dressing

– 2 tablespoons chopped fresh parsley (optional)

– Salt and pepper to taste


Instructions

1. In a large bowl, layer the corned beef, sauerkraut, and Swiss cheese.

2. Drizzle the thousand island dressing over the top and gently toss to combine.

3. Season with salt and pepper to taste.

4. Garnish with fresh parsley, if desired.

5. Serve immediately and enjoy!

Notes

For extra flavor, you can toast some rye bread croutons to sprinkle on top of the bowls. The Reuben Bowls can also be made ahead of time and refrigerated for up to 3 days.
