Instructions

1. In a large skillet or Dutch oven, heat the olive oil over medium heat.

2. Add the diced onion and sauté for 3-4 minutes until translucent.

3. Stir in the minced garlic and cook for an additional minute, until fragrant.

4. Add the shredded cabbage and continue cooking, stirring occasionally, for 5-7 minutes until slightly softened.

5. Pour in the can of diced tomatoes, including the juices, and stir to combine.

6. Sprinkle in the dried oregano, ground cinnamon, salt, and pepper. Stir well.

7. Add the uncooked rice and stir to coat the grains in the sauce.

8. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and has absorbed the flavors.

9. Remove from heat and let sit, covered, for 5 minutes.

10. Fluff the rice and cabbage mixture with a fork, then garnish with the chopped fresh parsley before serving.
