Description

Roasted Apricot Chicken Dinner is a delicious and easy weeknight meal that combines juicy chicken with sweet, caramelized apricots. The simple honey-apricot glaze adds incredible flavor, while the roasted vegetables make it a complete and satisfying dinner.


Ingredients

– 4 boneless, skinless chicken breasts

– 8 fresh apricots, halved and pitted

– 2 tablespoons honey

– 2 tablespoons olive oil

– 2 cloves garlic, minced

– 1 teaspoon dried thyme

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1 pound Brussels sprouts, halved

– 2 medium sweet potatoes, peeled and diced


Instructions

1. Preheat the oven to 400°F.

2. In a large baking dish, arrange the chicken breasts and apricot halves.

3. In a small bowl, whisk together the honey, olive oil, garlic, thyme, salt, and pepper. Pour the mixture over the chicken and apricots, making sure everything is evenly coated.

4. Roast for 25-30 minutes, until the chicken is cooked through and the apricots are softened and caramelized.

5. Meanwhile, toss the Brussels sprouts and sweet potato cubes with a drizzle of olive oil and season with salt and pepper.

6. Arrange the roasted vegetables around the chicken and apricots and return to the oven for an additional 15-20 minutes, or until the vegetables are tender.

7. Serve the Roasted Apricot Chicken Dinner immediately, garnished with fresh thyme if desired.
