Description

Ingredients

– 1 lb asparagus, trimmed

– 1 lb radishes, halved or quartered

– 2 tbsp olive oil

– 1 tsp garlic powder

– 1 tsp dried thyme

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. – Preheat oven to 400°F.

2. – In a large bowl, toss the asparagus and radishes with the olive oil, garlic powder, dried thyme, salt, and pepper until evenly coated.

3. – Spread the vegetables in a single layer on a large baking sheet.

4. – Roast for 12-15 minutes, stirring halfway, until the vegetables are tender and lightly browned.

5. – Serve immediately, garnished with additional fresh thyme if desired.

Notes

For extra crispy edges, broil the vegetables for 2-3 minutes at the end. You can also try substituting other fresh herbs, such as rosemary or oregano, in place of the thyme.
