Ingredients

– 1 lb roasted beets, peeled and sliced

– 8 oz crumbled goat cheese

– 1/4 cup honey, plus more for drizzling

– 1 sheet puff pastry, thawed

– 1 egg, beaten

– Salt and pepper to taste


Instructions

1. – Preheat oven to 400°F.

2. – Roll out the puff pastry on a lightly floured surface and cut into 6 equal-sized rounds.

3. – Press the rounds into a greased muffin tin, pressing the pastry up the sides to form tart shells.

4. – In a bowl, mix together the sliced roasted beets, crumbled goat cheese, and 1/4 cup honey.

5. – Spoon the beet and cheese mixture into the tart shells, dividing it evenly.

6. – Brush the edges of the pastry with the beaten egg.

7. – Bake for 20-25 minutes, until the pastry is golden brown.

8. – Remove from the oven and drizzle with additional honey.

9. – Serve warm and enjoy!
