Description

A delicious and easy-to-make appetizer featuring roasted beets and creamy goat cheese, perfect for entertaining or as a tasty snack.


Ingredients

– 4 medium beets, peeled and cut into 1-inch cubes

– 2 tablespoons olive oil

– Salt and freshly ground black pepper

– 8 ounces goat cheese, softened

– 2 tablespoons chopped fresh thyme

– 1 tablespoon chopped fresh parsley

– 1 teaspoon lemon zest

– Crackers or crostini, for serving


Instructions

1. Preheat the oven to 400°F. Toss the beet cubes with the olive oil and season with salt and pepper.

2. Arrange the beets in a single layer on a baking sheet and roast for 25-30 minutes, or until tender and caramelized.

3. In a medium bowl, combine the roasted beets, goat cheese, thyme, parsley, and lemon zest. Mix until well blended.

4. Transfer the mixture to a piece of parchment paper or plastic wrap and shape it into a log, about 8 inches long.

5. Refrigerate the log for at least 30 minutes to firm up.

6. Slice the log and serve with crackers or crostini.

Notes

The Roasted Beet & Goat Cheese Log can be made ahead of time and refrigerated for up to 3 days. Let it come to room temperature before serving.
