Ingredients
– 4 medium beets, peeled and cubed
– 2 tablespoons olive oil
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 5 ounces mixed greens
– 1/4 cup tahini
– 2 tablespoons lemon juice
– 1 tablespoon water
– 1 garlic clove, minced
– 1/4 teaspoon ground cumin
Instructions
1. 1. Preheat oven to 400°F. Toss the cubed beets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender.
