Ingredients
– 1 lb carrots, peeled and cut into 1-inch pieces
– 2 tbsp olive oil
– Salt and pepper to taste
– 1 cup whole-milk ricotta
– 2 tbsp heavy cream
– 1 tbsp honey
– 2 tsp red pepper flakes
Instructions
1. – Preheat oven to 400°F. Toss the carrots with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, until tender and caramelized.
2. – In a medium bowl, beat the ricotta and heavy cream until light and fluffy.
3. – Drizzle the hot honey over the roasted carrots. Top with the whipped ricotta.
4. – Sprinkle with red pepper flakes and serve immediately.
Notes
For a creamier texture, add an extra tablespoon of heavy cream to the whipped ricotta. The hot honey can be substituted with regular honey if you prefer less heat.
