Description

Tender, caramelized roasted carrots are paired with a creamy whipped ricotta and drizzled with a sweet and spicy hot honey for a comforting and flavor-packed side dish that’s ready in just 30 minutes.


Ingredients

– 1 lb carrots, peeled and cut into 1-inch pieces

– 2 tbsp olive oil

– Salt and pepper to taste

– 1 cup ricotta cheese

– 2 tbsp honey

– 1 tbsp hot sauce (such as Sriracha)

– 1 tbsp chopped fresh parsley


Instructions

1. – Preheat oven to 400°F. Toss the carrots with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, stirring halfway, until tender and caramelized.

2. – In a small bowl, mix together the ricotta, honey, and hot sauce until well combined.

3. – Transfer the roasted carrots to a serving dish and top with the whipped ricotta mixture. Garnish with chopped parsley.

4. – Serve immediately, while the carrots are hot and the ricotta is creamy.
