Ingredients
– 1 lb kohlrabi, peeled and cut into 1-inch cubes
– 2 tbsp olive oil
– 1 tsp salt
– 1/2 tsp black pepper
– 2 garlic cloves, minced
– 1 tbsp fresh thyme leaves
Instructions
1. – Preheat oven to 400°F (200°C).
2. – In a large bowl, toss the kohlrabi cubes with olive oil, salt, and pepper until well coated.
3. – Spread the kohlrabi in a single layer on a large baking sheet.
4. – Roast for 20-25 minutes, flipping halfway, until the kohlrabi is tender and caramelized.
5. – Remove from oven and sprinkle with minced garlic and fresh thyme.
6. – Serve immediately, garnished with additional herbs if desired.
