Ingredients

– 2 pounds beef sirloin or flank steaks

– 2 tablespoons olive oil

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 1 cup fresh mint leaves, finely chopped

– 3 garlic cloves, minced

– 2 tablespoons lemon zest

– 1 tablespoon lemon juice

– 1/4 cup olive oil


Instructions

1. Preheat oven to 425°F.

2. Pat the steaks dry and season both sides with salt and pepper.

3. Heat 2 tablespoons olive oil in a large, oven-safe skillet over high heat. Sear the steaks for 2-3 minutes per side until browned.

4. Transfer the skillet to the preheated oven and roast for 10-12 minutes for medium-rare, or until steaks reach desired doneness.

5. Let the steaks rest for 5 minutes.

6. In a small bowl, combine the mint, garlic, lemon zest, lemon juice, and 1/4 cup olive oil. Stir to mix well.

7. Slice the steaks and top with the mint gremolata before serving.

Notes

For best results, use fresh, high-quality ingredients. The gremolata can be made ahead of time and stored in the refrigerator until ready to use. Adjust cooking time for steak doneness as desired.
