Description
Rutabagas Romanoff is a comforting and delicious side dish featuring tender rutabagas in a rich, creamy sauce. This classic recipe is perfect for cozy autumn and winter meals.
Ingredients
– 3 pounds rutabagas, peeled and diced
– 4 tablespoons unsalted butter
– 1 large onion, diced
– 3 garlic cloves, minced
– 1 cup sour cream
– 1/2 cup milk
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 cup grated Parmesan cheese
– 2 tablespoons chopped fresh parsley
Instructions
1. Preheat the oven to 375°F.
2. In a large pot, cover the diced rutabagas with water and bring to a boil over high heat. Reduce heat to medium-low and simmer for 15-20 minutes, until tender. Drain and set aside.
3. In a large skillet, melt the butter over medium heat. Add the onion and sauté for 5-7 minutes, until translucent. Add the garlic and cook for 1 minute more.
4. In a large bowl, combine the cooked rutabagas, sautéed onion and garlic, sour cream, milk, salt, and pepper. Stir until well mixed.
5. Transfer the mixture to a 9×13-inch baking dish. Sprinkle the top with Parmesan cheese.
6. Bake for 25-30 minutes, until hot and bubbly. Garnish with chopped parsley before serving.
Notes
This dish can be made ahead and refrigerated for up to 3 days. Reheat in the oven before serving. For a lighter version, use low-fat sour cream and milk.
