Ingredients

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 1 egg

– 1 teaspoon vanilla extract

– 2 1/4 cups all-purpose flour

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt

– 8 ounces cream cheese, softened

– 1/2 cup powdered sugar

– 2 tablespoons caramel sauce

– Flaky sea salt, for sprinkling


Instructions

1. 1. Preheat oven to 350°F. Line two baking sheets with parchment paper.

2. 2. In a large bowl, cream the butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract.

3. 3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

4. 4. In another bowl, beat the cream cheese and powdered sugar until smooth and creamy.

5. 5. Scoop out 2-tablespoon sized balls of dough and press a small indent into the center. Fill the indent with about 1 teaspoon of the cheesecake mixture and a drizzle of caramel sauce.

6. 6. Bake for 12-14 minutes, or until the edges are lightly golden. Allow to cool on the baking sheets for 5 minutes before transferring to a wire rack.

7. 7. Sprinkle the cooled cookies with a pinch of flaky sea salt.

Notes

For best results, chill the dough for 30 minutes before scooping and baking. The cookies can be stored in an airtight container for up to 5 days.
