Description

Ingredients

– 2 cups all-purpose flour

– 1 cup unsalted butter, chilled and cubed

– 1/4 cup granulated sugar

– 1/4 teaspoon salt

– 1/4 cup ice water

– 1 cup honey

– 3 large eggs

– 1/4 cup chamomile flowers, plus more for garnish

– 1/4 teaspoon sea salt


Instructions

1. In a food processor, pulse the flour, butter, sugar, and salt until the mixture resembles coarse crumbs.

2. Add the ice water and pulse until the dough just starts to come together.

3. Shape the dough into a disc, wrap in plastic, and refrigerate for at least 30 minutes.

4. Preheat the oven to 375°F.

5. In a bowl, whisk together the honey, eggs, chamomile flowers, and sea salt.

6. Roll out the chilled dough and press it into a 9-inch pie plate.

7. Pour the honey-chamomile filling into the prepared crust.

8. Bake for 35-40 minutes, until the filling is set and the crust is golden brown.

9. Allow the pie to cool completely before slicing and serving.

10. Garnish with additional chamomile flowers, if desired.

Notes

This pie can be made a day in advance and stored in the refrigerator. The chamomile flowers can be substituted with 1 teaspoon of dried chamomile if fresh is not available.
