Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground ginger
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon salt
– 3 large eggs
– 1 cup granulated sugar
– 1/2 cup vegetable oil
– 1/4 cup unsweetened applesauce
– 2 cups grated carrots (about 4 medium carrots)
– 8 ounces cream cheese, softened
– 1/2 cup unsalted butter, softened
– 1 cup shredded Parmesan cheese
– 2 tablespoons chopped fresh herbs (such as thyme, rosemary, or chives)
– 1 tablespoon lemon zest
Instructions
1. Preheat oven to 350°F. Grease a 9-inch round cake pan and line the bottom with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, and salt.
3. In a large bowl, beat the eggs and sugar until light and fluffy, about 2-3 minutes. Gradually pour in the vegetable oil and applesauce, mixing until well combined.
4. Fold the dry ingredients into the wet ingredients until just combined, then stir in the grated carrots.
5. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
6. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
7. In a medium bowl, beat the cream cheese and butter until smooth and creamy. Fold in the Parmesan cheese, chopped herbs, and lemon zest.
8. Spread the herb cheese topping evenly over the top of the cooled cake.
9. Refrigerate the cake for at least 30 minutes before serving to allow the topping to set.
Notes
For a more pronounced herb flavor, increase the amount of fresh herbs to 3-4 tablespoons. You can also try using a blend of different cheeses, such as goat cheese or feta, in the topping.
