Description

Ingredients

– 3 pounds sweet potatoes, peeled and sliced into 1/4-inch rounds

– 2 cups heavy cream

– 1 cup shredded cheddar cheese

– 1/2 cup grated Parmesan cheese

– 2 cloves garlic, minced

– 1 teaspoon dried thyme

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

– Preheat the oven to 375°F (190°C).

– Grease a 9×13-inch baking dish.

– Arrange a layer of sweet potato slices in the prepared baking dish.

– In a medium bowl, whisk together the heavy cream, cheddar cheese, Parmesan cheese, garlic, thyme, salt, and pepper.

– Pour the cream mixture over the sweet potato layer.

– Repeat the layers of sweet potatoes and cream mixture until all the ingredients are used up.

– Cover the baking dish with foil and bake for 30 minutes.

– Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the top is golden brown and bubbly.

– Let the dish stand for 5 minutes before serving.

Notes

For a richer flavor, you can add a tablespoon of butter to the cream mixture. You can also experiment with different cheese combinations, such as Gruyère or Parmesan.
