Ingredients
– 4 ounces dark chocolate, chopped
– 1/2 cup unsalted butter, plus more for greasing
– 2 large eggs
– 2 large egg yolks
– 1/4 cup granulated sugar
– 2 tablespoons all-purpose flour
Instructions
1. Preheat oven to 450°F. Grease four 6-ounce ramekins with butter.
2. In a double boiler or microwave, melt the dark chocolate and butter, stirring occasionally until smooth. Set aside to cool slightly.
3. In a medium bowl, whisk together the eggs, egg yolks, and sugar until light and fluffy, about 2-3 minutes.
4. Gently fold the melted chocolate mixture into the egg mixture until just combined. Fold in the flour until no dry pockets remain.
5. Divide the batter evenly among the prepared ramekins.
6. Bake for 8-10 minutes, until the edges are set but the centers are still soft and gooey.
7. Carefully run a knife around the edges of the ramekins and invert the cakes onto plates. Serve immediately, garnished with powdered sugar, if desired.
Notes
For best results, use high-quality dark chocolate. The cakes can be made in advance and refrigerated, then baked right before serving.
