Description

This Sicilian Fennel Orange Salad is a bright and zesty dish that celebrates the flavors of the Mediterranean. Crisp fennel, juicy oranges, and a tangy lemon dressing come together to create a refreshing and flavorful salad that’s perfect for a light lunch or a side dish.


Ingredients

– 2 medium fennel bulbs, thinly sliced

– 3 oranges, peeled and segmented

– 1/4 cup extra-virgin olive oil

– 2 tablespoons white wine vinegar

– 1 tablespoon lemon juice

– 1 teaspoon Dijon mustard

– 1 garlic clove, minced

– 1/4 cup chopped fresh parsley

– Salt and freshly ground black pepper, to taste


Instructions

1. In a large bowl, combine the sliced fennel and orange segments.

2. In a small bowl, whisk together the olive oil, vinegar, lemon juice, Dijon mustard, and minced garlic. Season with salt and pepper to taste.

3. Pour the dressing over the fennel and oranges, and toss gently to coat.

4. Sprinkle the chopped parsley over the salad and toss again.

5. Serve immediately or chill in the refrigerator for up to 30 minutes before serving.

Notes

For a heartier meal, you can add grilled shrimp or chicken to this salad. You can also experiment with different types of citrus, such as grapefruit or tangerine, for a variation in flavor.
