Ingredients
– 1 lb boneless, skinless chicken breasts
– 6 cups chicken broth
– 3 carrots, peeled and sliced
– 2 celery stalks, sliced
– 1 onion, diced
– 3 garlic cloves, minced
– 2 bay leaves
– 1 tsp dried thyme
– 1 tsp dried parsley
– Salt and pepper to taste
– 8 oz egg noodles
Instructions
1. – Place the chicken, broth, carrots, celery, onion, garlic, bay leaves, thyme, and parsley in a slow cooker. Season with salt and pepper.
2. – Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
3. – Remove the chicken from the slow cooker and shred or chop it.
4. – Add the shredded chicken and egg noodles to the slow cooker. Cook for an additional 30 minutes, or until the noodles are tender.
5. – Taste and adjust seasoning as needed.
6. – Serve hot, garnished with additional parsley if desired.
