Description

Indulge in the ultimate St. Patrick’s Day feast with this melt-in-your-mouth Slow Cooker Corned Beef and Cabbage recipe. Tender, flavorful corned beef simmers to perfection alongside savory cabbage, potatoes, and carrots, creating a comforting and authentic Irish dish that’s perfect for any occasion.

Ingredients

– 3 pounds corned beef brisket

– 1 head green cabbage, cut into wedges

– 4 medium potatoes, peeled and quartered

– 4 carrots, peeled and cut into 2-inch pieces

– 1 onion, sliced

– 3 cloves garlic, minced

– 1 tablespoon brown sugar

– 1 teaspoon black pepper

– 1 cup beef broth

Instructions

1. Place the corned beef brisket in a slow cooker. Arrange the cabbage wedges, potatoes, carrots, and onion around the brisket.

2. Sprinkle the garlic, brown sugar, and black pepper over the vegetables.

3. Pour the beef broth into the slow cooker.

4. Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the meat and vegetables are tender.

5. Remove the brisket from the slow cooker and slice against the grain.

6. Serve the sliced corned beef with the cooked vegetables, spooning the cooking liquid over the top.

Notes

For a more flavorful dish, rub the corned beef brisket with your favorite spices or herbs before placing it in the slow cooker. You can also add a splash of Guinness or Irish whiskey to the cooking liquid for extra richness.
