Description

Slow Cooker Lasagna Soup is a cozy and comforting dish that combines the flavors of classic lasagna with the convenience of a hearty soup. This easy-to-make recipe simmers in the slow cooker, allowing the flavors to meld together for a rich and satisfying meal.

Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 1 can (28 oz) diced tomatoes

– 1 can (6 oz) tomato paste

– 4 cups beef broth

– 8 oz lasagna noodles, broken into pieces

– 1 cup ricotta cheese

– 1/2 cup grated Parmesan cheese

– 1/4 cup fresh basil, chopped

– Salt and pepper to taste

Instructions

1. – In a skillet, brown the ground beef over medium-high heat. Drain excess fat.

2. – Add the onion and garlic to the skillet and cook until softened, about 5 minutes.

3. – Transfer the beef mixture to a slow cooker.

4. – Add the diced tomatoes, tomato paste, and beef broth to the slow cooker. Stir to combine.

5. – Stir in the broken lasagna noodles.

6. – Cover and cook on low for 4-6 hours, or until the noodles are tender.

7. – In a small bowl, mix together the ricotta cheese, Parmesan cheese, and fresh basil.

8. – Serve the Slow Cooker Lasagna Soup hot, with a dollop of the cheese mixture on top.

Notes

– For a thicker soup, let it simmer for a longer period of time.

– Add extra vegetables like spinach, zucchini, or bell peppers for added nutrition.

– Serve with crusty garlic bread for dipping.
