Description

Ingredients

– 2 pounds russet potatoes, peeled and diced

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups chicken or vegetable broth

– 1 cup heavy cream

– Salt and pepper to taste

– Chopped chives, shredded cheese, and crispy bacon bits for garnish (optional)


Instructions

1. – Add the diced potatoes, onion, and garlic to a slow cooker. Pour in the broth and stir to combine.

2. – Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are very soft.

3. – Using an immersion blender, puree the soup until it reaches your desired consistency. Alternatively, you can transfer the soup to a blender and blend in batches.

4. – Stir in the heavy cream and season with salt and pepper to taste.
