Description

Tender, juicy smoked chicken thighs with a delectable crispy skin and rich, smoky flavor. Perfect for an easy weeknight dinner or casual gatherings.


Ingredients

– 6 bone-in, skin-on chicken thighs

– 2 tablespoons smoked paprika

– 1 tablespoon garlic powder

– 1 tablespoon onion powder

– 1 teaspoon cayenne pepper

– 1 teaspoon salt

– 1/2 teaspoon black pepper


Instructions

1. Pat the chicken thighs dry with paper towels and place them in a large bowl.

2. In a small bowl, combine the smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Rub the seasoning mixture all over the chicken thighs, making sure to coat them evenly.

3. Preheat your smoker to 225°F (107°C). Add wood chips or chunks to the smoker, following the manufacturer’s instructions.

4. Place the seasoned chicken thighs on the smoker grates, ensuring they are not touching. Close the lid and smoke for 1.5-2 hours, or until the internal temperature reaches 165°F (74°C).

5. Remove the smoked chicken thighs from the smoker and let them rest for 5-10 minutes before serving.

Notes

For extra crispy skin, you can broil the smoked chicken thighs for 2-3 minutes after smoking. This will help the skin become even more golden and delicious.
