Ingredients
– 1 lb ground beef
– 2 medium sweet potatoes, peeled and cubed
– 1 onion, diced
– 1 bell pepper, diced
– 3 cloves garlic, minced
– 1 tbsp chili powder
– 1 tsp cumin
– 1 tsp smoked paprika
– 1 tsp dried oregano
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1 cup beef broth
– 2 tbsp fresh cilantro, chopped (for garnish)
Instructions
1. – In a large skillet over medium-high heat, cook the ground beef until browned and crumbled, 5-7 minutes.
2. – Drain any excess fat from the skillet.
3. – Add the diced onion and bell pepper to the skillet and cook for 3-4 minutes, until softened.
4. – Stir in the minced garlic and cook for 1 minute, until fragrant.
5. – Add the cubed sweet potatoes, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir to combine.
6. – Pour in the beef broth and bring the mixture to a simmer.
7. – Reduce heat to medium-low, cover, and cook for 15-20 minutes, or until the sweet potatoes are tender.
8. – Remove the lid and continue cooking for 2-3 minutes to allow the sauce to thicken slightly.
9. – Garnish with fresh chopped cilantro before serving.
Notes
