Description

Ingredients

– 2 cups cucumbers, diced

– 1 cup shelled edamame

– 1 tablespoon rice vinegar

– 1 tablespoon lime juice

– 1 teaspoon sesame oil

– 1 teaspoon soy sauce

– 1 teaspoon honey

– 1/4 teaspoon red pepper flakes (or to taste)

– 2 tablespoons chopped fresh cilantro

– Salt and pepper to taste


Instructions

1. 1. In a large bowl, combine the diced cucumbers and edamame.

2. 2. In a small bowl, whisk together the rice vinegar, lime juice, sesame oil, soy sauce, honey, and red pepper flakes.

3. 3. Pour the dressing over the cucumber and edamame mixture and toss to combine.

Notes

For a creamier texture, you can also add a tablespoon of Greek yogurt to the dressing. Adjust the amount of red pepper flakes to your desired level of spiciness. This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
