Ingredients
– 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
– 1/4 cup honey
– 2 tablespoons jalapeño pepper, finely chopped (seeds and membranes removed for less heat)
– 2 tablespoons soy sauce
– 1 tablespoon olive oil
– 1 teaspoon garlic powder
– 1/2 teaspoon smoked paprika
– 1/4 teaspoon cayenne pepper (optional, for extra spice)
– Salt and black pepper to taste
Instructions
1. – In a large bowl, whisk together the honey, jalapeño, soy sauce, olive oil, garlic powder, smoked paprika, and cayenne pepper (if using).
2. – Add the cubed chicken to the marinade and toss to coat evenly. Cover and refrigerate for 30 minutes to 1 hour.
3. – Preheat grill or grill pan to medium-high heat.
4. – Thread the marinated chicken cubes onto skewers, leaving a little space between each piece.
5. – Grill the chicken skewers for 4-5 minutes per side, or until the chicken is cooked through and charred.
