Description
This classic Split Pea Soup is a comforting, protein-packed meal that’s easy to make at home. Packed with tender split peas, savory vegetables, and aromatic herbs, this soup is the ultimate cozy dish for a chilly day.
Ingredients
– 1 tablespoon olive oil
– 1 onion, diced
– 2 carrots, peeled and diced
– 2 celery stalks, diced
– 3 cloves garlic, minced
– 1 pound dried split peas, rinsed
– 6 cups vegetable or chicken broth
– 1 bay leaf
– 1 teaspoon dried thyme
– 1/2 teaspoon ground cumin
– Salt and black pepper to taste
Instructions
1. In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Add the onion, carrots, and celery. Sauté for 5-7 minutes, until the vegetables are softened.
3. Add the garlic and sauté for 1 minute, until fragrant.
4. Stir in the split peas, broth, bay leaf, thyme, and cumin. Bring the mixture to a boil.
5. Reduce the heat to low, cover, and simmer for 45-60 minutes, stirring occasionally, until the split peas are very soft and the soup has thickened.
6. Remove the bay leaf. Season with salt and pepper to taste.
7. Serve the Split Pea Soup hot, garnished with croutons, a swirl of sour cream or yogurt, and fresh herbs if desired.
Notes
For a creamier texture, you can use an immersion blender to partially purée the soup. You can also add diced ham or smoked sausage for extra flavor.
