Description

Ingredients

– 3 cups all-purpose flour

– 1 teaspoon salt

– 1 tablespoon sugar

– 1 packet (2 1/4 teaspoons) active dry yeast

– 1 cup warm water

– 1/4 cup olive oil

– 2 cups chopped spring greens (such as spinach, kale, and arugula)

– 1/2 cup crumbled feta cheese

– 1 egg, beaten with 1 tablespoon water (for egg wash)


Instructions

1. In a large bowl, combine the flour, salt, sugar, and yeast. Add the warm water and olive oil, and knead until a smooth, elastic dough forms. Cover and let rise for 1 hour.

2. In a separate bowl, mix the chopped spring greens and crumbled feta cheese.

3. Punch down the dough and divide it into two equal pieces. Roll each piece into a 12-inch circle on a lightly floured surface.

4. Place one dough circle on a parchment-lined baking sheet. Spread the greens and feta mixture over the dough, leaving a 1-inch border.

5. Place the second dough circle on top and crimp the edges to seal. Using a sharp knife or pizza cutter, cut the dough into 16 equal wedges, being careful not to cut all the way through.

6. Gently twist each wedge to create a star shape. Cover and let rise for 30 minutes.

7. Preheat the oven to 375°F (190°C).

8. Brush the star bread with the egg wash.

9. Bake for 25-30 minutes, or until the crust is golden brown.

10. Let cool for 10 minutes before serving.

Notes

For a variation, try using different seasonal greens or adding in diced roasted vegetables. This bread also freezes well, so you can make it ahead of time and reheat as needed.
