Description
Stamppot is a beloved Dutch national dish that combines mashed potatoes with a variety of vegetables and often sausage or other meat. This easy, 30-minute version is a comforting and flavorful take on the classic.
Ingredients
– 2 pounds Russet potatoes, peeled and cut into 1-inch cubes
– 1 cup chopped kale
– 1 cup chopped carrots
– 1 medium onion, diced
– 2 cloves garlic, minced
– 1 pound smoked sausage, sliced
– 1/2 cup milk
– 2 tablespoons butter
– 1 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. In a large pot, cover the potato cubes with cold water and bring to a boil over high heat.
2. Reduce heat to medium-low and simmer for 15-20 minutes, until the potatoes are fork-tender.
3. Drain the potatoes and return them to the pot. Add the milk and butter, then mash until smooth.
4. Stir in the kale, carrots, onion, and garlic. Cook for 5-7 minutes, until the vegetables are tender.
5. Add the sliced sausage and season with salt and pepper. Stir to combine.
6. Serve the stamppot warm, garnished with additional chopped parsley if desired.
Notes
For a vegetarian option, omit the sausage and use vegetable broth instead of milk. You can also experiment with different vegetables like spinach, brussels sprouts, or parsnips.
