Ingredients
– 2 cups all-purpose flour
– 2 teaspoons baking powder
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1 1/2 cups granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 cup milk
– 2 cups fresh strawberries, sliced
– 1 (8 ounce) package cream cheese, softened
– 1/2 cup powdered sugar
Instructions
1. Preheat the oven to 350°F. Grease a 9×13 inch baking dish.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, beat the butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla.
4. Alternate adding the flour mixture and milk to the butter mixture, mixing just until incorporated.
5. Spread half of the batter into the prepared baking dish. Top with the sliced strawberries.
6. In a small bowl, beat the cream cheese and powdered sugar until smooth. Dollop the cream cheese mixture over the strawberries and spread evenly.
7. Carefully spread the remaining batter over the cream cheese layer.
8. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
9. Allow the cake to cool completely before serving.
Notes
For a sweeter version, you can sprinkle additional powdered sugar on top of the baked cake. This cake can be stored in the refrigerator for up to 4 days.
