Description

Indulge in the sweet and buttery flavors of Strawberry Pop Tart Slab Pie, a quick and easy homemade version of the beloved childhood favorite. This comforting dessert features a flaky crust, a vibrant strawberry filling, and a crumbly pop tart-inspired topping.

Ingredients

– 2 cups all-purpose flour

– 1 teaspoon salt

– 1 cup unsalted butter, chilled and cubed

– 1/4 cup ice water

– 4 cups fresh strawberries, hulled and sliced

– 1 cup granulated sugar

– 2 tablespoons cornstarch

– 1 teaspoon vanilla extract

– 1 egg, beaten

Instructions

1. Preheat your oven to 400°F (200°C).

2. In a large bowl, combine the flour and salt. Cut in the chilled butter until the mixture resembles coarse crumbs. Gradually add the ice water, mixing until the dough just begins to come together.

3. Divide the dough into two equal pieces. Roll out one piece into a rectangle that fits a 9×13-inch baking pan. Transfer the dough to the pan and press it into the bottom and up the sides.

4. In a separate bowl, mix the sliced strawberries, sugar, cornstarch, and vanilla extract until well combined.

5. Spread the strawberry filling evenly over the dough in the baking pan.

6. Roll out the remaining dough into a rectangle that covers the top of the filling. Place the dough over the filling and crimp the edges to seal.

7. Brush the top of the dough with the beaten egg.

8. Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.

9. Allow the Strawberry Pop Tart Slab Pie to cool completely before slicing and serving.

Notes

For a crispier crust, consider chilling the dough for 30 minutes before rolling and assembling the pie. You can also experiment with different fruit fillings, such as blueberry or raspberry, to create your own unique twist on this classic treat.
