Ingredients
– 2 1/4 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 egg
– 1 teaspoon vanilla extract
– 1 cup strawberry preserves
– Powdered sugar, for dusting
Instructions
1. 1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. 2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. 3. In a large bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla until combined.

5. 5. Roll the dough out on a lightly floured surface to 1/4-inch thickness. Use a 2-inch round cookie cutter to cut out circles.

Notes
Store the cookies in an airtight container at room temperature for up to 5 days. You can also freeze the unbaked cookie dough for up to 3 months.
