Description

This Strawberry Spinach Salad with Poppyseed Dressing is a delightful and refreshing summer dish that combines juicy strawberries, crisp spinach, and a tangy, creamy dressing for a perfect balance of flavors.


Ingredients

– 8 cups fresh spinach, washed and dried

– 1 pint fresh strawberries, hulled and sliced

– 1/4 cup sliced almonds

– 1/4 cup crumbled feta cheese

– For the Poppyseed Dressing:

– 1/4 cup white wine vinegar

– 2 tablespoons honey

– 1 tablespoon Dijon mustard

– 1/2 cup olive oil

– 1 tablespoon poppy seeds

– Salt and pepper to taste


Instructions

1. In a large salad bowl, combine the spinach, sliced strawberries, sliced almonds, and crumbled feta cheese.

2. In a small bowl, whisk together the white wine vinegar, honey, Dijon mustard, olive oil, and poppy seeds until emulsified. Season with salt and pepper to taste.

3. Drizzle the poppyseed dressing over the salad and toss gently to coat the ingredients evenly.

Notes
