Ingredients
– 1 pound ground beef
– 1 cup fresh corn kernels
– 1 tablespoon olive oil
– 1 teaspoon chili powder
– 1/2 teaspoon garlic powder
– 1/4 teaspoon smoked paprika
– Salt and pepper to taste
– 8 small taco shells
– 1 cup shredded cheddar cheese
– 1/2 cup diced tomatoes
– 1/4 cup diced red onion
– 2 tablespoons chopped cilantro
– Lime wedges, for serving
Instructions
1. In a large skillet, heat the olive oil over medium-high heat. Add the corn kernels and cook for 5-7 minutes, stirring occasionally, until lightly charred. Remove from heat and set aside.
2. In a mixing bowl, gently combine the ground beef, chili powder, garlic powder, smoked paprika, and a pinch of salt and pepper. Form the mixture into 8 small, thin patties.
3. Preheat a griddle or large skillet over medium-high heat. Cook the burger patties for 2-3 minutes per side, or until they’re cooked through and have a nice sear.
4. Warm the taco shells according to package instructions.
5. To assemble, place a burger patty in each taco shell. Top with the charred corn, shredded cheese, diced tomatoes, red onion, and chopped cilantro.
