Ingredients

– 1 lb ground beef

– 1/2 cup breadcrumbs

– 1 egg

– 1/2 onion, finely chopped

– 3 cloves garlic, minced

– 1 tsp dried thyme

– 1 tsp salt

– 1/2 tsp black pepper

– 1 cup Guinness beer

– 2 cups beef broth

– 2 tbsp all-purpose flour

– 2 tbsp butter

– Chopped parsley, for garnish


Instructions

1. – In a large bowl, combine the ground beef, breadcrumbs, egg, onion, garlic, thyme, salt, and pepper. Mix until well incorporated.

2. – Scoop out about 2 tablespoons of the beef mixture and form it into a ball. Using your thumb, create a well in the center and stuff with a small cube of cheese (optional).

3. – Seal the meatball by gently pinching the meat around the cheese.

4. – In a large skillet over medium-high heat, brown the stuffed meatballs on all sides, about 3-4 minutes per side.

5. – Remove the meatballs from the skillet and set aside.

6. – In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly.

7. – Slowly pour in the Guinness beer and beef broth, whisking continuously to prevent lumps.

8. – Bring the gravy to a simmer and return the meatballs to the skillet. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the meatballs are cooked through.

9. – Garnish with chopped parsley and serve hot, over mashed potatoes or your favorite sides.

Notes

– For a cheesy twist, stuff the meatballs with a small cube of cheddar or mozzarella cheese.

– Leftovers can be stored in the refrigerator for up to 4 days or frozen for later use.
