– 2 3/4 cups all-purpose flour

– 1 teaspoon baking powder

Instructions

1. – Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.

2. – In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3. – In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla.

4. – Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix.

5. – Scoop dough by rounded tablespoons onto the prepared baking sheets, spacing them about 2 inches apart.

6. – Bake for 8-10 minutes, until the edges just begin to lightly brown.

7. – Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

For an extra-chewy texture, refrigerate the dough for at least 30 minutes before baking. You can also roll the dough in sanding sugar before baking for a sparkly finish.
