Ingredients

– 2 1/4 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 1 cup unsalted butter, softened

– 1 1/2 cups granulated sugar

– 1 egg

– 2 teaspoons vanilla extract

– 3 cups confectioners’ sugar

– 3 tablespoons milk

– 1 tablespoon light corn syrup

– 1/2 teaspoon vanilla extract


Instructions

1. – Preheat oven to 375°F. Line baking sheets with parchment paper.

2. – In a medium bowl, whisk together the flour, baking powder, and salt.

3. – In a large bowl, beat the butter and granulated sugar until light and fluffy, about 2-3 minutes.

4. – Beat in the egg and 2 teaspoons of vanilla extract until combined.

5. – Gradually add the dry ingredients to the wet ingredients and mix until just combined.

6. – Roll the dough out to 1/4-inch thickness on a lightly floured surface.

7. – Cut out shapes using cookie cutters and place on the prepared baking sheets.

8. – Bake for 8-10 minutes, until the edges are lightly golden.

9. – Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

10. – In a medium bowl, whisk together the confectioners’ sugar, milk, corn syrup, and 1/2 teaspoon of vanilla until smooth.

11. – Spread or pipe the royal icing onto the cooled cookies.

12. – Let the iced cookies sit at room temperature until the icing has set, about 30 minutes.

Notes

Store the cookies in an airtight container at room temperature for up to 1 week. The royal icing may need to be thinned with a bit of additional milk if it becomes too thick over time.
