Ingredients

– 4 (6-ounce) sustainable cod fillets

– 2 tablespoons olive oil

– 2 tablespoons chopped fresh parsley

– 1 tablespoon chopped fresh dill

– 1 tablespoon chopped fresh thyme

– 1 teaspoon lemon zest

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. 1. Preheat your oven to 400°F (200°C).

2. 2. In a small bowl, combine the olive oil, parsley, dill, thyme, lemon zest, salt, and pepper.

3. 3. Pat the cod fillets dry with a paper towel and place them on a baking sheet lined with parchment paper.

4. 4. Evenly distribute the herb mixture over the top of the cod fillets, gently pressing it into the fish.

5. 5. Bake the cod for 15-20 minutes, or until it flakes easily with a fork and the internal temperature reaches 145°F (63°C).
