Ingredients

– 2 tablespoons sesame oil

– 3 cloves garlic, minced

– 1 inch ginger, grated

– 1 red bell pepper, sliced

– 1 cup broccoli florets

– 1 cup snap peas

– 1 cup mushrooms, sliced

– 2 cups baby bok choy, chopped

– 2 tablespoons low-sodium soy sauce

– 1 tablespoon rice vinegar

– 1 teaspoon sesame seeds

– Salt and pepper to taste


Instructions

1. – Heat the sesame oil in a large wok or skillet over high heat.

2. – Add the garlic and ginger and sauté for 1 minute until fragrant.

3. – Add the bell pepper, broccoli, snap peas, mushrooms, and bok choy. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

4. – Pour in the soy sauce and rice vinegar. Toss to coat the vegetables evenly.

5. – Sprinkle with sesame seeds and season with salt and pepper to taste.

6. – Serve the sustainable veggie stir-fry immediately, over steamed rice or noodles if desired.

Notes

For added protein, you can also add tofu, chicken, or shrimp to this stir-fry. Feel free to use any combination of fresh, seasonal vegetables you have on hand.
