Description

Ingredients

– 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)

– 1 cup unsalted butter, melted

– 1 cup granulated sugar

– 2 large eggs

– 1 cup all-purpose flour

– 1 teaspoon ground cinnamon


Instructions

1. Preheat oven to 350°F. Grease an 8×8-inch baking pan.

2. In a large bowl, combine the mashed sweet potatoes, melted butter, and sugar. Mix until well blended.

3. Beat in the eggs one at a time, mixing well after each addition.

4. Stir in the flour and cinnamon until just combined, being careful not to overmix.

5. Spread the batter evenly into the prepared baking pan.

6. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

7. Allow the bars to cool completely before cutting into squares and serving.

Notes

For a creamier texture, you can substitute half the butter with cream cheese. The bars can be stored in an airtight container at room temperature for up to 4 days.
