Description

This Taco Soup with Ranch Packet is a quick and easy weeknight meal that’s bursting with flavor. The addition of a hidden ranch seasoning packet takes this comforting soup to the next level.


Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 1 packet taco seasoning

– 1 packet ranch seasoning

– 1 (15 oz) can black beans, drained and rinsed

– 1 (15 oz) can pinto beans, drained and rinsed

– 1 (15 oz) can corn, drained

– 1 (28 oz) can diced tomatoes

– 4 cups beef broth

– Salt and pepper to taste

– Toppings: shredded cheese, sour cream, chopped cilantro, tortilla chips


Instructions

1. 1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned and crumbled, 5-7 minutes. Drain any excess fat.

2. 2. Add the diced onion and minced garlic to the pot and cook for 2-3 minutes, until fragrant.

3. 3. Sprinkle in the taco seasoning and ranch seasoning, and stir to coat the beef and vegetables.

4. 4. Pour in the black beans, pinto beans, corn, diced tomatoes, and beef broth. Stir to combine.

5. 5. Bring the soup to a simmer and let it cook for 15-20 minutes, stirring occasionally, until the flavors have melded.

6. 6. Season with salt and pepper to taste.

7. 7. Serve the taco soup hot, garnished with shredded cheese, sour cream, chopped cilantro, and tortilla chips.

Notes

For a thicker soup, you can mash some of the beans against the side of the pot. You can also adjust the amount of broth to reach your desired consistency. This soup freezes well for up to 3 months.
