Ingredients
– 16 ounces goat cheese, softened

Instructions
1. In a medium bowl, combine the softened goat cheese, chopped herbs, lemon zest, salt, and black pepper. Mix until well combined.
2. Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the sides.
3. Spoon half of the goat cheese mixture into the prepared pan, smoothing the top. Refrigerate for 30 minutes.
4. Spoon the remaining goat cheese mixture over the chilled layer, smoothing the top. Cover and refrigerate for at least 2 hours, or up to 2 days.
5. When ready to serve, use the parchment paper to carefully lift the terrine out of the pan. Slice and arrange on a serving platter. Serve with crackers, crostini, or your preferred accompaniments.
